It can be hard to find the time to cook when you are busy, so we compiled a list of our favorite quick and easy recipes for healthcare providers who are short on time.
Baked Tomatoes with Mozzarella and Parmesan

INGREDIENTS:
4 Roma tomatoes sliced
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
1/2 cup fresh basil chopped
Olive oil
INSTRUCTIONS:
Preheat oven to 400F
Place tomato slices on a parchment-lined baking sheet
Top each tomato with a layer of Parmesan and then a layer of mozzarella
Sprinkle the chopped basil on top of each tomato
Drizzle lightly with olive oil
Bake for 8-10 minutes or until cheese is melted and bubbly
Turn off oven and broil for 2-3 minutes to brown the cheese
Serve immediately. Enjoy!
Microwave Steamed Veggies

INGREDIENTS:
4 cups assorted cut-up fresh
vegetables (such as broccoli,
cauliflower, onion, carrot, zucchini, summer squash, bell pepper and/or green beans)
2 tablespoons water
2 tablespoons butter with
Canola oil
1 to 2 tablespoons fresh chopped herbs (such as basil, oregano, rosemary, thyme and/or parsley)
Salt, if desired
Pepper, if desired
INSTRUCTIONS:
Place cut vegetables and water in a bowl; cover. Microwave 3-4 minutes or until vegetables are crisply tender. Drain.
Add Butter with Canola Oil, herbs, salt and pepper, if desired. Toss until vegetables are evenly coated.
Microwave Chicken Fajitas

INGREDIENTS:
1 red pepper, or green pepper
1 White onion
2 tablespoons Southwest seasoning mix (I use the Pampered Chef Southwest Seasoning Mix)
Large packet of chicken tenders or 4 chicken breasts cut in long strips
Fajita wraps
Cheese (such as pepper jack, cheddar, Mexican blend).
INSTRUCTIONS:
Cut red and green peppers into slices and put them in a microwave-safe dish that has a cover. Then slice your onion and add to the dish.
Sprinkle well with Southwest seasoning
Put your chicken on top of your vegetables in the dish and sprinkle the chicken with seasoning as well.
Cover the dish and microwave on high for 10 minutes.
Serve with fajita wraps and cheese
5-Minute Vegetarian Burrito Bowl

INGREDIENTS:
1 cup cooked brown rice (I used Trader Joe's frozen pre-cooked brown rice)
1/2 cup black beans, drained and rinsed
2-3 tablespoons salsa, or to taste
1 tablespoon plain Greek yogurt
1 tablespoon shredded cheddar or Mexican-blend cheese
TOPPINGS:
Diced avocado
Diced tomato
Guacamole
Pico de gallo
INSTRUCTIONS:
Prepare brown rice according to
package instructions.
In a microwave-safe bowl, combine
rice, black beans, salsa, plain Greek
yogurt, and shredded cheese.
Microwave on high for 30-60 seconds, or until heated through.
Top with diced avocado, diced tomato, guacamole, pico de gallo, or other desired toppings.
Skillet Tortilla Pizza

INGREDIENTS:
1 teaspoon olive oil
1 10-inch tortilla
1/4 cup pizza sauce
1 cup mozzarella cheese, shredded
1 tablespoon Parmesan cheese, grated
8 slices of pepperoni (optional)
INSTRUCTIONS:
Heat the oil in a skillet over medium-high heat
Remove from heat and add the tortilla
Spread on the sauce and top with cheese and pizza topping
Place under the broiler in the oven until cheese has melted (2-4 minutes)
